We had the chance to break open the latest addition to our kitchen last night while celebrating a double date at home around the table for an easy, entertaining meal without spending $40 per person at The Melting Pot.
I was delighted to receive this pot from by boyfriend's mother as she knew it would be something we could enjoy with our friends at our cozy Lincoln Park apartment.
My family celebrates this Swiss tradition every Christmas Eve, but we now need no excuse to break out the pot anytime we want to have a fun gathering. It's the perfect size for about four people but keep in mind, you may need multiple pots if you have a larger group.
The cast iron is the best because it's easy cooking and easy clean up! Just be sure to soak overnight and plan to use up a couple of sponges to remove the cheeses.
1 garlic clove, halved crosswise
1 1/2 cups dry white wine
2-3 tablespoons cornstarch
2 teaspoons brandy
1/2 pound Emmental cheese, coarsely grated (2 cups)
1/2 pound Gruyère, coarsely grated (2 cups)
Sides for dipping (may vary)
Grate the cheeses and place in a large bowl. Toss the cheese with two tablespoons of corn starch. Dice one clove or garlic. Place the wine in the cast iron pot on the stove over medium heat and cook until it begins to bubble. Add the garlic to the pot while gradually adding the cheese. Continue to stir the cheese and add a touch of cornstarch if necessary until you reach your desired texture. The cheese will be perfect when it coats the bread and begins to harden quickly coating your dipping item with a layer of gooey, salty goodness.
The easiest way to light a fire to this pot is by placing a small container of cooking fuel under the pot and then use the snuffer to adjust the heat if it gets too hot.

Our server Jeremy was the best server we had throughout our entire trip to Maui! He was able to theatrically describe the menu which featured the catches of the day with details on where and by whom the fish was caught. This is a foodie paradise for good food if you are staying close to Lahaina. This is the only restaurant that has a homegrown farm on the island producing the fresh ingredients for a menu that will blow you away. Come out for a night under the stars at Pacific'O and you will experience bright flavors and colors on the menu like you have never seen! Purple potatoes anyone? Such delicious combinations of diverse flavors and a perfectly designed menu! Pacific'O is a jem on Maui!! Must visit!!
Mama's Fish House
Our room was perfection! Such charm. The restaurant is definitely the highlight of this destination. I would suggest doing the road to Hana and then spend the night at Mamas for an unforgettable dinner and cozy room. This destination is renowned and has been visited by celebrities and has been authenticated by the State of Hawaii for being a landmark and must-see on the island of Maui. We will return for dinner every time we visit, but would never stay more than a night here because the beach is not the best.
Feast at Lele
This Luau is perfect for those who want to sit back, relax and be treated to the best island foods and culture without ever having to leave your seat.
As opposed to some of the buffet style luaus the meal is multi-coursed for diners to enjoy throughout the beautiful show. The location is so ideally located on the Lahaina shores and the show is incredibly breathtaking with fire and all this luau is worth the extra buck!
The food blew us away!!! It was as if we were dining in a four-star restaurant. They will also accommodate for dietary restrictions. Two thumbs up for the Feast at Lele!!
Maui Paddle Sports
We were greeted for our 7:30 a.m. outrigger excursion by a very extroverted, happy and humorous group of locals who run the business. Our guides gave us a brief instruction on how to paddle; we filled up our water bottles with cold water, and we were off.
The paddling trip a great activity to start your day before the sun gets too hot. The day we chose the water was so calm, our guide Jeremy mentioned that they could only go as far out as we did to see the whales 100 out of 365 days of the year. We chased the whales following their footprints as they came up for water just to the side of our six-person canoes. This was one of the most incredible experiences to be so close to these massive, majestic creatures.
The water is so clear that you can see straight through to the bottle of the reefs. We canoed over a cave where many sea turtles were living. They swam up right to the side of the canoe, and one of the sea turtles even flipped up out of the water shocking us all.
Our guides were hilarious, and they taught us a lot about nature on the island along with the Hawaiian traditions and lingo. The best part of the trip was seeing a flying fish out on the water! Amazing! You will need to be somewhat physically fit and ready to do a little work on the ride but it's not hard, and it was a very relaxing enriching journey.

For the icing, unless you are a real pro with decorating with royal icing, I have found it's easier just to buy a tube from the store and use the cake mate decorating tips to make the lacing design on the cookies. These were a touchdown with the whole crowd and will be a classic to bring back year after year.
